This is not originally our recipe but Kevin has had these photographs published in a book out of Australia for 'Weird Food" We have only made this a few times. I use lean sausage and a lot of the fat renders out. It ends up being a lot like a burger when you serve it but it's so flavorful and heavy that it's usually a special occasion thing for us to make. We know when we make it people will show up at our house for sure Kevin said he also seasons the bacon that he fries to crumble but you don't have to.
