My favorite pancake mix recipe (bulk!)

12 c. white flour
12 c. pastry wheat flour
2 c. baking powder, scant
3 c. sugar
4 T. salt

Mix it in a huge bowl with a sturdy wooden
spoon. Stir slowly and thoroughly.
BATTER: 1 cup mix, 1 egg, 2 tablespoons oil,
3/4-1 cup milk. Makes about 5 big pancakes.
I also like to add in some vanilla or a
cinnamon/sugar mixture. Maybe someday one
of you will inherit that big griddle that I love
to use for making lots of pancakes!
